The Big Fat Red Door

I have a confession to make. I love cake. Well, okay, I love eating cake. Cake makes me happy. Really, really happy. The fact that cake is usually made with butter and cream makes it even better. When I find a recipe that makes decadent delicious cake, I get all excited. After all, the next week is Father’s Day and I know he’ll love it.

These are the three recipes I’ve found that I think are the absolute best and I give them to friends all the time. I think they’d be fun to make for a “thank you” Father’s Day gift for any of your Moms.

This one I saw a while back and had to try it. It’s my absolute favorite of all the recipes I’ve made.

Big Fat Red Door

1/2 cup butter (melted)

1 cup sugar (divided in half)

1 cup water

3 eggs

1/4 teaspoon salt

1 teaspoon vanilla

2 cups flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 cup hot coffee

1 cup chocolate chips

1 cup chopped nuts (optional)

Cream butter and sugar until light and fluffy. Add water slowly until blended. Add eggs and beat until fluffy. Blend in salt, vanilla and coffee. Sift flour, baking powder and baking soda. Add slowly until fully blended. Stir in chocolate chips and nuts. Drop rounded tablespoonfuls onto greased cookie sheet. Bake at 350 degrees for 10 minutes, or until browned around edges.define([],
